jbdragon17 Posted May 22, 2006 Share Posted May 22, 2006 Yesterday I tried another creation. I marinated my venison steaks in the tried and true Italian/Teriyaki mix for a day and a half. Then I grilled the veni to medium on a charcoal grill. At the same time, I heated the marinade in a sauce pan bringing it to a rapid boil (cooked it down some). I had some nice soft French bread which I buttered on both sides. I added the venison and a couple slices of mozzarella, and then set it on a cookie sheet beneath a broiler for about 4 minutes (melt the cheese and toast the bred). I served the marinade in a cup with the sandwich. Small dips in the marinade were perfect as it was too salty for a huge dunk . Next variation will be with sautéed peppers and onions and maybe dilute the marinade with red wine or water to see if I can reduce the saltiness.
