Fish Patties

I am going to give you a walleye cake recipe that I have used in our restaurants with great success. The sucker could be implemented either cooked or smoked:

Fishcakes

16 oz Whitefish (cooked or smoked)

4 cups dried bread crumbs

3/4 cup mayonaisse

1 finely shredded carrot

1/2 medium red onion fine chopped

2 sticks celery fine chopped

A pinch of chopped garlic or 1/2 teaspoon granulated garlic

1/4 teaspoon old bay seasoning

Salt & Pepper

Combine above ingredients in a bowl by hand with care not to break the cooked fish up to much so there is still texture. Before I patty, I will taste a little to see if there is any need to add any seasoning.

I generally form them into 2 ounce patties prior to breading. Once patties are formed dip each patty in flour until fully covered and shake off excess. Next dip in egg wash (50/50 egg & milk). Then finally roll in breadcrumbs untill fully covered.

You can cook these in a multitude of ways but I prefer to fry mine till they are golden brown.

What would you do with a sucker? I ask because I know that they are filled with bones. I think it would be to much work to cook it and then pick out all the bones.

My uncle was explaining to me how they do this with Northerns, he said that they just grind up the bones and make like a hamburger pattie with it add salt and pepper and then fry in oil.

With suckers I grind them up extra fine.

Then add seasoning salt/peppers to taste, finely chopped garlic, onions and some lemon grass. Then roll them in flour and slid them into hot oil, until golden brown.

They taste great and it makes it a little harder, to them for bait.
