Sunfish Scramble

I'm sure it has been done before, but it was my first try at it, and I will do it again.

Saturday I sautéed a dozen sunny fillets with onions in butter and added my eggs with some seasoning. Added some cheese once the eggs were almost done. It was VERY good.

Interesting. I'll have to give that a whirl. Not sure if I would do it with freshly cleaned sunnies, but sure sounds like a different way to eat some that are in the freezer.

Yeah... I was thinking omelet at first. Then just figured I'd dump the eggs in and mix it all together. I was not disappointed.

Sounds great. I love fish and eggs in the morning. Usually a summer family get together meal. This sounds even easier!!!
