LABS4ME Posted December 15, 2005 Share Posted December 15, 2005 After plowing the drive last night I was a little bored, went to the freezer to get the last bag of trimmings and low and behold I had 2 bags of trimmings left. Well I made up the Polish sausage and that is ready to stuff in the casings and put in the smoker tonight (along with 2 chickens and 2 pheasants MMMMMM), but what to do with the other 4lb bag of trimmings.... Hmmm, I only had bought enough pork shoulder to make the Polish and didn't want to run back to the store, I really don't like plain ground venison burger to grill ice fishing.....HMMMMMM O.K. here goes what I came up with, even the wife ate it last night and she in the past would never even consider eating a venison burger... Take 4-5 lbs of CLEAN venison trimmings, make sure you remove all the sinew and tallow... Using your coarse plate, Grind venison with 1 lb of bacon... I used 1/2 pound of coarse pepper bacon and a 1/2 pound of double smoked bacon... mix in one packet of Lipton onion soup mix and a little garlic powder into the ground meat add a little water if nessacary to evenly distrubute it.... chop up 1/3-1/2 of an onion, add pieces to the meat as you send through the grinder a second time... make patties and seperate them with wax paper, (4) 1/4 pound patties per package and you are ready for some good grilling ice fishing. Next time I'm going to try to add some BBQ sauce to the meat mixture so all I'll have to add is some cheese when up fishing. These were phenomenal! I cooked up a couple sample patties last night and like I said, my wife wanted me to make her another one! I can't believe after 16 years I finally got her eating deer! Good Luck!
