Buck12 Posted August 2, 2005 Share Posted August 2, 2005 This is one of my favorites: spray a glass baking pan with pam. Arrange filets(approx 3 fish), On stove melt 1/3 stick of butter, add 1/2 tsp. salt, 1 tsp worcherstire sauce,1 tsp. lemon juice and 1/2 tsp tobassco. Baste filets with 1/2 mixture. Chop little green onions, sliced tomato, sliced mushrooms, and chop red peppers; omit anything you don't like. Cover fish with the veggies and drizzle with rest of butter mixture. Cover with tin foil and bake 40 min. at 350 on middle rack. Remove tin foil and broil for 10 minutes on middle rack. Link to comment Share on other sites More sharing options...

Woollman99 Posted August 23, 2005 Share Posted August 23, 2005 As an option to an kitchen oven, which takes some time, try baking your fish on a gas grill. I take a large generous piece of tin foil, lay 6-8 walleye fillets flat, season well with lemon pepper and salt (or cut up a fresh lemon and season with salt/pepper), lay some sliced onions on top, cut up a fresh single clove of garlic (not too much) and lay on top, add a couple dabs of butter (not margarine) and fold the tin foil up tight. I then cover again in second piece of foil and fold up tight (helps keep the butter and juices in). Place on a hot grill and cook 7-9 minutes on each side. I usually use a large spatula to flip over the foil pad.Take off the grill cut open the foil and enjoy. Very easy, very fast, very good and little clean up. WalleyeWeasel Posted August 24, 2005 Share Posted August 24, 2005 A little no stick (whatever you like) on the bottom of the dish, lay fillets in the dish, spread real Miracle whip on them, ( not the light stuff, or mayonaise) bake or broil till mayo gets a little brown....done. Windy City Walleye Hunter Posted September 13, 2005 Share Posted September 13, 2005 Hey Boener,Try this one.Slice up a few yellow onions about a quarter inch thick. Leave the rings of onion solid, do not seperate the rings. Do the same with about 3 or 4 lemons.Put a layer of onions on the bottom of the baking dish, then put a layer of walleye fillets then a layer of lemons and keep alternating them until you fill up the dish or run out of walleye fillets, which ever comes first. You can sprinkle the fillets with some lemon pepper and or garlic powder if you like a stronger flavor or just use the onions and lemon if you want the walleye flavor to be more pronounced.Bake this in about a 350 degree oven and don't worry about the bottom burning. You actually want the bottom to burn a little as this will carmelize the onions on the bottom and gives a great flavor. Serve with some wild rice or some fried potatoes and onions and green peppers. Serve with a bottle of wine if you have a lady sharing the meal or serve with a six pack of suds if the guys are chowing down.
