You can either clean them like any other fish by just filleting out the meat with the skin on, or the traditional way is gutting them out-making sure to remove vein near the spine- and stuff the cavity with anything you want. Easiest is butter, onions and lemon. Easy and tasty, but you can get pretty wild with the 347 recipes on the HSOforum listed. Good luck, Nick

The best recipe I've found is gutting, heading, cut fish crosswise into 1 1/2" steaks, even small fish, boil in salt water (5-6 qts water, 1 cup salt) for 12-15 minutes. Peel, dip in melted butter, enjoy. Tastes alot like crab or other seafood.

Also good smoked or grilled.

I had an awesome recepie for smoking them in your kitchen oven. Of course I can't find it now, but I did find it on the net. I cut the head off and gut them, then brined them over night in the fridge 12 hours. I took them out, rinse them off, and let them air dry for about a half hour. During this time, turn the oven onto 175 degrees and let it warm up. Then I used a very small amount of liquid smoke and brushed it on the skin of the trout. I then put them in the oven on the top rack and put a large cookie sheet on the rack under them to deflect the heat. It took about 4-5 hours to do 3 12-14" trout. Let cool and enjoy. My buddy thought I had bought a smoker and couldn't believe I did them in my oven. Very tasty!!!

I just "smoked" a 15" laker I caught yesterday. It turned out EXCELLENT!!! The method I used above is very easy, even I can't screw it up! grin.gif Just use any brine you want and give it a try, you'll be pleasantly suprised I'm sure.
