The kiddie's are back in school, some cool nights ahead this week with cooler days...time to grab that pork on sale and whip out a Reb's Apple Roast... Reb's Apple Roast One 3 lb Pork Butt Roast, trimmed Two cups Fresh Apple Cider (I use Pepin Heights) Good pork seasoning (or just some cracked black pepper to suit) Rosemary 4 oz Cinnamon Apple Sauce (These are the “Snak Pak” size cups) One Yellow Onion, sliced into rings One sliced tart apple, skin on Marinate the roast in the cider in a Zip-Loc bag, in the fridge, for 6-8 hours, turning frequently.Place roast in a greased baking dish, with some of the marinade. Sprinkle liberally with seasoning, lightly with the Rosemary, and alternate and place half the onion rings and apple slices on top of roast. Put the Cinnamon Apple sauce over top of this. Put other half of apples and onion rings around roast in dish. Put in a 325* oven for one hour, uncovered. Pull out, cover, and cook for 45 mns- 1 hr.. longer until meat thermometer registers 155-160. Let sit covered for 15 minutes to rest before slicing. Enjoy!
