First I brewed a basic wheat beer recipe consisting of; 50% Wheat, and 50% Pilsner and 1oz of Tettnanger hops. OG was 1.045. It fermented for 2 months with Weihenstephan Weizen yeast, and then I transferred it to a secondary fermentor and added 1 Liter of Raw buckwheat honey, and 4.5lbs of frozen raspberries. I added fresh brettanomyces Trois yeast, and also Pediococcus to turn it sour. Will give it a good year to sit and hopefully will have a great tasting beer.
