If you use a Nuvi, all of the details will be the same as a handheld, if you get a MicroSD card, you can use that in multiple Garmin devices. A few differences you will see between a handheld and a Nuvi will be zoom level, handhelds zoom to 20 feet, Nuvi's will zoom to 80 feet.

Waypoints are called Favorites on the Nuvi.

One item I really miss on a Nuvi is the pointer telling you direction and how far to travel to a waypoint, you kind of get this with the Nuvi but it's nothing like the handheld.

If you are just looking to find structure, the Nuvi will work just fine with the Upper Midwest Fishing Guide.

As for comparing the data on Lakemaster, Navionics and Garmins Upper Midwest Fishing Guide, I've never found any earth shattering differences other than 1 foot contours and 3 foot contours on some lakes. I don't travel to a lot of different lakes but where I use it, they all work fine.

I have both Navionics and the chip - they seem identical in resolution and accuracy to me. If it wasn't for needing a dedicated GPS for BWCA and other trips, I probably wouldn't even own the chip. Navionics is that good.
