hoggs222 Posted March 9, 2013 Share Posted March 9, 2013 Quick question on smoking beef sticks here. I've seen that you need 80% beef, 20% pork with beef sticks. Can you just use 80/20 ground beef?I have a cabelas grinder with the stuffer attachments. KEN W Posted March 9, 2013 Share Posted March 9, 2013 One thing about using a grinder stuffer attachment.It can be a real pain.Putting the casings on and trying to push the meat into them is like trying to stuff a balloon.Especially if you are using 2 different kinds of meat that you are pushing through a second time after seasoning.A whole lot easier to get a stuffer.80-20 works fine.But again since it is already ground once.....tough to push through a second time.If you don't want to buy a stuffer.....I would buy chuck roasts,cut them into small enough pieces and season them....then run through the grinder into casings.Also beef sticks are made using small diameter sheep casings.They aren't the easiest to use,which is why almost all commercial sticks don't use casings.
