Actually 2 of them (one up at the lake) Haven't done a chicken like this in a while and I have one in the freezer screaming at me to get drunk out on the grill. LABS4ME Posted July 24, 2012 Share Posted July 24, 2012 Cut an onion in about a 1/3rd and put it right in the 'chimney' of the bird... where the neck and breast come together... Keeps the steam in! I use 1/3 rd a can of beer (good rich nutty beer) and then continue to fill the can to just over half way with a good chicken marinade... that steam along with the onion block really put good flavor to the chicken... a little butter and olive oil (or better yet, butter and bacon drippings!) baste at the end to crisp it up...
