That's what I did last week, so I'll give my new technique a shot next time I catch one. What was very helpful was an illustration of the structure of the bones, a cross-section of the fish. If your fish are 10 to 15 pounds, the bones are big enough to "crack" out of the filet after you cook it!!!!!!!!! Just kidding..........
