fowldreams
Just wondering what most of you prefer, going with baby backs or with spare ribs? What is the main difference between the two?

thirdeye
Just wondering what most of you prefer, going with baby backs or with spare ribs? What is the main difference between the two? Spares are my favorite too. Baby back ribs are leaner, smaller, and easier (and take less time) to cook tender because they are "high on the hog", so they have less connective tissue. And BB's are are more expensive. I think the flavor of spares is better, they are meatier (especially if you cook the untrimmed slab.... but they require more time and a little more skill to cook. Chef
St. Louis two eighty nine per pound at the CosCo...BB's are way to $$$ to warrant that much for scrap meat.
fowldreams
I picked up four racks of spare at sams for 2.48/lb. I used the 3-2-1 method and they were fantastic. New egg lived up to the hype . Cant wait to do more.
