Leaky Posted April 20, 2012 Share Posted April 20, 2012 Oh My! Trying to figure out what I want to cook this weekend. I think dessert is set. Haven't had one of these for ages and my mouth is waterin looking at that picture. Now thats one easy recipe. I have a Betty Crocker cookbook so old and handed down that I have to put a thick rubber band around it in order to sit on the shelf. It was great (and easy)!Sandra Lee's Semi-Homemade must have been based on Betty Crocker recipes, cause thats exactly what this is. Cake Mix, Canned Pineapple & a small jar of cherries. Heck, my eggs were 4 days past the sell by date, so I figured this, along with boiling the rest for egg salad, was a big win. Good stuff and it turned out just like your picture. I had to put a spray of Reddi Whip on it and a scoop of ice cream along side.(But,thats just me).Thanks again for posting this. It's very similar to a Rhubarb Cake recipe I need to dig out. I have some rhubarb comeing up so Im definitly interested in your cake recipe.We also just made some Potica which is for the most part an up north type of desert bread with a honey and walnut mixture rolled up inside. I could post the recipe but this isnt very easy to make as you have to stretch the dough out very thin. If I get a chance Ill post a pic. Leaky Posted April 23, 2012 Share Posted April 23, 2012 Love Potica - Growing up in Ely, it is a holiday staple. And your right, very difficult to make. Truly an art.1 yellow or white box cake mix2cups of rhubarb- cubed 1 cup of sugar 1 small bag mini marshmellows1 small box of "Strawberry" Jello In a cake pan, spread the rhubarb, sprinkle the jello and sugar equally over the rhubarb. Layer marshmellows next. Mix the box mix according to the instructions and pour over other ingredients. Bake according to the box instructions. Flip cake over out of the pan and let cool.
