While cleaning my perch and walleyes I got to thinking. Most of them where full of eggs. It seems like a waste to just throw em out. Has anybody cooked/cured them before? I'm considering experimenting but thought I would check here first.

I fry up perch eggs just like perch filets: I dip them in eggs and milk, roll them in Shore Lunch, dip them again in the eggs and milk, roll them in ground saltines with a little garlic powder and black pepper mixed in, then fry them in a mix of peanut and canola oil.

As for Northern eggs sacs, I just tried something new last night, and was quite happy with it...

Look up a recipe for Cavier,Some freshwater fish roe tastes fishy some not.I have tried many different species as Cavier,Nothing more than salt cured roe.The sac does have to be removed all of it.rinse the roe in clear water then a salt water cure,remove from cure put in sealed container in fridge.Some taste great some not so.
