Paella is my favorite for a crowd--Seafood and land food (Chicken or Phez and Sausage, Shrimp, Mussels, Clams.A Pesto/Cream sauce is perfect to toss your favorite cooked pasta in along with some saute'd Shrimp and Scallops, [PoorWordUsage] or Crimini mushrooms, sliced Red bell Peppers and toasted Pine Nuts. OnAFly Posted January 18, 2012 Share Posted January 18, 2012 Shrimp RissottoSaute shallots in butter and olive oil until clear, add garlicadd arborio rice and stir until a translucent film appears on the riceadd chicken stock to top of the rice and continue to stir, add white winegrill red peppers and asparagusdice peppers and cut asparagus to 1" lengthscontinue to stir and add stock while this is going onwhen rice is almost done, add asparagus and peppersadd shrimp shortly after the veggiesonce shrimp is cooked, add parmesan cheese and stir until fully incorporatedserve and enjoy.I make this for my wife once in a while, it's her favorite. It's a little time intensive as it takes about 45 minutes to make and you need to continuously stir it. When done right, its like rice in a very rich and creamy sauce, though no cream or milk is used. Some people use a shortcut and add cream but continuously stirring gives a much better outcome. old goose hunter Posted January 19, 2012 Share Posted January 19, 2012 Grilled halibut in garlic butter.start half chimney of charcoal in the Weber, when coals are hotput a throw away foil pan on grill with 1 stick of butter, 20 cloves minced garlic, a teaspoon of old bay seasoning. season halibut fillets with sea salt and pepper. After garlic softens and starts to caramelize put the halibut fillets in pan and cook until flakes pull apart, bastingwith garlic butter every minute or two.
