Favorite seafood meal

Chiapino is good. Paella is my favorite for a crowd--Seafood and land food (Chicken or Phez and Sausage, Shrimp, Mussels, Clams.

A Pesto/Cream sauce is perfect to toss your favorite cooked pasta in along with some saute'd Shrimp and Scallops, [PoorWordUsage] or Crimini mushrooms, sliced Red bell Peppers and toasted Pine Nuts.

Shrimp Rissotto

Saute shallots in butter and olive oil until clear, add garlic

add arborio rice and stir until a translucent film appears on the rice

add chicken stock to top of the rice and continue to stir, add white wine

grill red peppers and asparagus

dice peppers and cut asparagus to 1" lengths

continue to stir and add stock while this is going on

when rice is almost done, add asparagus and peppers

add shrimp shortly after the veggies

once shrimp is cooked, add parmesan cheese and stir until fully incorporated

serve and enjoy.

I make this for my wife once in a while, it's her favorite. It's a little time intensive as it takes about 45 minutes to make and you need to continuously stir it. When done right, its like rice in a very rich and creamy sauce, though no cream or milk is used. Some people use a shortcut and add cream but continuously stirring gives a much better outcome.

Linguini with Clams

saute shallots in butter and a bit of olive oil

once clear, add garlic and white wine

saute and reduce the wine

add clams and a bit of thyme

saute until just before done and add al dente linguini

full incorporate and serve

I don't measure for either of these recipes, so I really have no idea how much I'm putting in. This is a fairly quick and easy recipe. Takes maybe 20 minutes and is very good.

Grilled halibut in garlic butter.

start half chimney of charcoal in the Weber, when coals are hot

put a throw away foil pan on grill with 1 stick of butter, 20 cloves minced garlic, a teaspoon of old bay seasoning. season halibut fillets

with sea salt and pepper. After garlic softens and starts to caramelize

put the halibut fillets in pan and cook until flakes pull apart, basting

with garlic butter every minute or two. Put that next to a salad and

some grilled peppers, maybe a glass or two of wine.
