I also use the valve on the tank as well as the temp control on my burner to manage the temp. As the meat in the smoker heats up, the temp will rise. You also might want to add a water pan with water (if you dont have one). I have found that that the water pan helps to maintain a more consistent temp. I try to make small adjustments, so I am not constantly chasing the temp I want.

It just takes running it a few times, to "learn" your smoker.
