So, i'm thinking instead of flowers in my pots on the deck, I would try something i can eat. How would green peppers do planted in larger pots?

If you keep enough moisture and fertilizer, they will probably grow even better in a pot. Peppers thrive in the heat. Actually the trick is to keep more of an even moisture level and make sure the soil is light enough. 3 or even 2 gallon pots can be used.

Dandelions? They flower and you can eat them best of both worlds?

You can also ferment them. True story, the boss always follows recipes to the tee, and actually went to the store and paid for them.
