Thanks! Your body's natural ability (obviously better in some than in others) to make micro-adjustments for balance will be hindered by sitting on a camp stool. Your center of gravity will be a lot higher, relative to the kayak, making it more unstable. I think that a camp stool is probably the worst of both worlds. Just go out in an empty (or full with all gear properly stowed/ waterproofed) kayak and stand around. Bring one rod and wear your life jacket, and practice. Start in calm weather and and small, warm water. Work your way into a little more "dicey" situations, hook into some big fish and prepare for and practice a quick sit down when you do hook up. With proper preparation and planning, the worst thing that happens is you tip the boat and get wet. But, you'll be picking up a very useful ability.Or hook up some outriggers.
