KEN W Posted March 4, 2010 Share Posted March 4, 2010 I'm going to smoke some tomorrow along with some crappies.I fillet them out and leave the skin on.Brine them overnight in 1/4 C salt with 1 QT. water.Put them on the rack in your smoker and pat them dry with paper towels.....smoke doesn't penetrate unless they are dry.I have a Masterbuilt smoker that is very effecient.I set the temp at 225 and put 2-3 oz. of wood in twice.Leave them in for about 3 hours.Depending on how thick they are and how done you want them.Tullibees ahve that row of bones like northwerns do so be carefull when eqating them.
