Kidd Posted January 22, 2010 Share Posted January 22, 2010 A timely topic for me as I was just thinking of doing the same thing to a bunch of Sunfish and Crappies I have in the freezer.I was just going to do it the old fashioned way with a typical salt/sugar brine. KEN W Posted January 22, 2010 Share Posted January 22, 2010 This is one my dad used for many years.I also use it.3C Water2 Tbs Salt1/2 C Brown sugar1 tsp Worschester1/2 tsp Garlic PowderLeave the skin on the fillets.Mix the above ingredients and add the fillets.Make sure they are covered.Put in the fridge 4 hoursSmoke 1 hrLeave in smoker until they are done to your liking.They will be a rich brown color.I like them a little dry.I just smoked some Tullibee filets yesterday using this recipe.
