I like it just on the grill. Mix up a portion 1/2 and 1/2 mustard/mayo. Slather on both sides and grill to med, med rare. After flipping, you could add a couple lemon slices on top of fish, or just the juice from the slices.

The mustard/mayo sounds goofy, but all it does is make the fillet non-stick and does not impare any odd flavor to the fish.

It's also good chunked into smaller pieces and deep fried with a batter just like you would walleye or crappie.

Put some foil on the grill (charcoal preferably)

Butter both sides of fillet and season one side with saeson salt.

Lay on foil - add a couple of pads of butter between fillets and some minced garlic. Sqeeze the juice of half lemon over fillets.

Let this cook for 4-5 minutes, flip and squeeze some more lemon juice over fillets and season again with season salt and fresh cracked pepper. Cook another 4-5 minutes or until fillets begin to flake...

As good as any great cut of meat! Love Halibut!
