with tullibee which i think are about the same if not the same I cover them in kosher salt for 24hrs before smoking, rinse an hr before smoking, let sit at room temp til about ready to smoke, then add seasoning right before I throw them in the smoker. normally brown sugar, garlic, fresh pepper...things like that. Im sure ppl on here have some better ones but that is easy and has always turned out good
