maddowg1192000 Posted January 20, 2010 Share Posted January 20, 2010 with tullibee which i think are about the same if not the same I cover them in kosher salt for 24hrs before smoking, rinse an hr before smoking, let sit at room temp til about ready to smoke, then add seasoning right before I throw them in the smoker. normally brown sugar, garlic, fresh pepper...things like that.
