tsande00 Posted December 21, 2009 Share Posted December 21, 2009 electric fillet knife!I'll sometimes use a fork to "hold" them. Cut in behind the head, than down the length of the fish. Right as I'm about to get through the end of the tail I stop cutting, flip fillet up and onto it's scale side and then skin from there. Only thing left is to hack out the ribs. pushbutton Posted December 21, 2009 Share Posted December 21, 2009 i put that no slip sand paper like stuff that is used for concrete steps on my filet board, use a small filet knife, also give the fish an ice bath, when they start to get stiff it is time to cut.
