Quetico
The general rule of thumb is to prune in the opposite season in which they flower. Apples are spring flowering and should be pruned in the fall after the leaves drop. Late fall and would be the best times to prune.
Powerstroke
Quetico is right on. We do the bulk of our apple trimming in Nov and Dec.
2springers
Always prune fruit trees when they are dormant. Otherwise you risk them becoming infected with whats called "Fireblight"
