So far as price of canvas, you get what you pay for. Regarding sewing, any canvas shop ought to be able to do what you want.

Buy your canvas from them, and you'll probally get a better price on the sewing.

Also, most canvas shops can give you pointers if you talk to them in advance - what works, what doesn't.

If you would like 500 or 1000 Denier Cordura Nylon fabric, try Cooke Custom Sewing. They make canoe packs, and you can buy the material for "Do-it-yourselfers". They also have zippers/ nylon webbing/. They have a HSOforum.

The only canvas shop I've dealt with is Custom Canvas Plus, just off Hwy 52 N in
Rochester.

I went to them w/ a custom drawn plan for a project I was working on - they suggested the best material, and did a top rate job on the sewing - relatively quick too. Plus they (any canvas shop for that matter)have the machines to handle the material and the know-how. Price was reasonable.

There is a place in Lino Lakes/Centerville area that I bought canvas from a few years ago. I can't remember the name, but they were very reasonable, and good quality. They could sew it for you as well, but it's more expensive. I can't remember the name exactly, I'll try to look for it.
