abens1078 Posted October 5, 2004 Share Posted October 5, 2004 I've noticed quite a few posts for waterfowel and phesant recipes so I figured I would throw out a recipe for a real simple side dish. I imagine most of you already have it. Swamp rice,Ingredients1 stick of butter1 can cream of mushroom soup1 envelope dry onion soup mix2 cups of instant, white rice1 small can mushrooms (opt)I usually melt the butter in a mixing bowl and then add all other ingredients to the melted butter. Stir until everything is mixed well and there are no pockets of dry rice.For a batch this size I place the mixture in a glass or Pyrex bread dish or any other dish where I can keep the mixture about 2 1/2" deep(rice won't dry out). Cover with lid or foil and place in a pre-heated, 350 degree, oven for 40 minutes. I like to take the cover off for the last 5 min. so the top gets a little crisp.Serves 4 comfortably.I'm having it with some leftover deer loin roast right now and I figured I just as well share it. happy chewingabens1078 Link to comment Share on other sites More sharing options...
