I think they are way easier to skin if you hang them by the head, It just pulls off easier. especially when you get to the hind quarters. As far as cooling off just shove stick in there cavity to spread it open. The hind quarters are just as easy to slice up while it's hanging there. the loins should come out right away, and what does everyone do with their ribs. And I'm with snapcrackpop on the torch thing the smell of burnt hair is nasty, get a clean rag and use the hose on that sucker.
