BLACKJACK Posted September 9, 2004 Share Posted September 9, 2004 Found a pack of pheasant legs with the thighs attached in the freezer, thought about smoking them, any good recipes? I could just go with the old stand by 50/50 salt/brown sugar marinade but thought some of you might have a better idea? fishhook8 Posted September 12, 2004 Share Posted September 12, 2004 If you like wild rice soup? I will use the breast meat for different things. Start with one whole onion cut up, put in a large kettle, add enough water to cover the meat, add some chicken stock for additional flavor.Boil for and hour or so, pull the meat out of the stock to cool. Continue to boil the water off the stock, add one cup of wild rice, after the pheasant cools pull the meat apart and throw it in the kettle. After the rice starts to enlarge and split add one large can of cream of mushroom soup, add whole milk to get the desired thickness, also add carrots, mushrooms etc. Their is plenty of salt in the chicken stock and soup. I just add black pepper to taste. We have a meal then freeze the rest in meal size containers. Works good for preprepared meals for hunting and fishing outings. Just add bread and butter.
