Salmon recipies

I was visiting my uncle this weekend and he gave me a nice king salmon. I've cooked walleye and panfish before, but the problem is I have never prepared a salmon. I was just curious as to what people's favorite recipes are.

Either I sprinkle some of my BBQ dry rub on it, or slather it with a honey mustard mix (buckwheat honey and dijon) or just throw it on the grill naked. I always do it on charcoal.

We asians don't like to waste much of the fish....so this is what we do. Just gut the fish and clip off all the fins, tail.... but leave the head on. The head is a delicacy at most resturaunts. People love the eyes...and I'm not kidding either! Then we use a good amount of lemon to clean the body inside and out. Salt up the body just a bit to give it a bit more flavor. I put cut onions, 2 pieces of lemon grass on the inside(totally gives the guy more flavor), and brush some oyster sauce inside and out. Wrap it in aluminum foil and either bake it or grill it. You wouldn't imagine how much flavor just the few ingredients gives. I also love the natural taste of salmon anyways. Give it a try if you've never tried this before. You can get the lemon grass and oyster sauce right at cub foods! Look in the asian section. grin.gif
