Paul Waldowski Posted March 12, 2003 Share Posted March 12, 2003 One mile - One HOT1/4 cup olive oil2 tablespoons garlic -- minced1 cup onion -- minced3/4 cup scallions -- minced2 cups celery -- minced 1 tablespoon parsley -- minced2 pounds ground round3/4 cup tomato paste16 ounces tomato sauce5 cups water -- hot1/3 cup hot chile powder1 teaspoon salt1/4 teaspoon freshly ground black pepper1 cup cooked kidney beans -- drained1 cup jack cheese -- gratedHEAT OLIVE OIL IN A DUTCH OVEN, OVER A MEDIUM FLAME ADD GARLIC, ONIONS, CELERY, AND PARSLEY HEAT AND STIR FOR 5-6 MINUTES ADD GROUND BEEF, HEAT AND STIR UNTIL BROWNED DRAIN WELL, RESERVING PAN DRIPPINGS ADD 1/4 CUP RESERVED DRIPPINGS BACK INTO MEAT MIXTURE AND DISCARD THE REST ADD TOMATO PASTE, TOMATO SAUCE, WATER, CHILE POWDER, SALT, AND PEPPER BRING TO A BOIL, REDUCE HEAT, AND SIMMER FOR 60-90 MINUTES ADD BEANS AND SIMMER FOR 10-15 MINUTES, UNTIL HEATED THROUGH SERVE HOT, GARNISHED WITH GRATED JACK CHEESE3 lb Beef Boneless Round Steak; *1 c Onion; Finely Chopped, 1 lg4 ea Cloves Garlic;Finely Chopped1/4 cup Vegetable Oil2 cup Tomato Puree2 tb Red Chiles; Ground, To Taste1 ts Cumin Seed; Ground1 ts Coriander; Ground4 ea Anaheim Chiles; **4 ea Jalapeno Chiles; *** Round Steak should be cut into 1-inch cubes. ** Peppers should be seeded and chopped. ~------------------------------------------------------ ~----------------- Cook and stir beef, onion and garlic in 4-quart Dutch oven until beef is brown. Stir in remaining ingredients except cheese, tortillas and beans. Heat to boiling; reduce heat. Cover and simmer, stirring occasionally, until beef is tender, about 2 hours.
