As with most, fresh fish or those that have been frozen less than 1 or 2 months are the best.Melt a half stick or so of butter in the microwave and then add 1 to 2 tbsp of chopped parsley and a shot of lemon juice.Arrange your walleye fillets in a 8"x12"x2" dish and pour the butter mix over the fish and coat them good. Sprinkle a little Old Bay Spice and Lemon Pepper on them and then some buttery cracker crumbs over the top.Cover with a piece of wax paper and microwave on high for 9 to 11 minutes. Rotate dish a 1/2 turn after the first 5 minutes.Serve with homemade tartar sauce, hard rolls and corn on the cob....Easy, quick, easy to clean up and does not stink up the house!
