2 Good Beef Jerky Marinades

We made these marinades for beef jerky not long ago and they are both VERY good!

Beef Jerky Marinade

½ c. soy sauce
½ c. worcestershire sauce
2 T. ketchup
1¼ tsp. salt
½ tsp. pepper
2T. brown sugar
1 clove garlic (mashed)
½ tsp. onion powder

Cut 2 lb. meat into strips about ¼" thick. Jerky will be more tender if you cut the meat against the grain.
Mix all ingredients together.
Marinate meat in the fridge at least 1 hour before dehydrating.

Sweet & Sour Jerky Marinade

½ c. red wine vinegar
1 tsp. garlic powder
2 tsp. salt
3/4 c. pineapple juice
½ c. brown sugar
¼ c. soy sauce
¼ tsp. ground ginger

How to Prepare:

Cut 3 lb. meat into stris about ¼" thick. The jerky will be more tender if you cut the meat against the grain
Mix all ingredients together..
Marinate meat at least 6 hours before dehydrating. Stir occasionally to be sure meat all gets covered while marinating.

I read the other thread on making jerky early last week, and by Wednesday I was an owner of a new dehydrator! Thursday night I put some venison in the fridge to thaw out, and started to marinate it Friday evening.

Yesterday, I made first jerky and was surprised at how well it turned out. Still room for improvement, but I thought I'd share the recipes I used for the marinade. Let me know if you have any suggestions.

Jerky
2 tsp liquid smoke
1/2 cup soy sauce
1/2 cup Worcestershire sauce
1 tsp garlic powder
1 tsp ground peppercorn

Jerky with a Bite
4 tsp liquid smoke
2 cups water
1 cup Worcestershire sauce
8 tsp onion powder
6 tsp kosher salt
8 tsp garlic powder
5 tsp cayenne pepper
8 tsp black pepper
2 tsp ground peppercorn


Marinated about 2 pounds of 1/4 inch venison in each marinade. Meat was marinated overnight, about 14 hours. Blotted each piece of meat with a paper towel, and place on dehydrator tray. Sprinkled some ground peppercorns on the meat. Dehydrated for about 5 hours.

Jerky turned out with a good texture, good flavor and not too salty.
