Baked crispy fish?

Hello all.
Say does anyone have a good baked panfish recipe that does not leave your fish chewy or soft. I love pan-frying fish but I am trying to go the healthy route. I tried a recipe last night which turned out ok but I think I can do better. Basically I used a flour / cornmeal mix, coated the fish then dipped them in a egg wash and then used instant potato flakes to coat. I baked them for 20 minutes at 400 and they were good but kinda chewy.
Any one have some tips or recipes??

Try using crushed corn flakes or rice crispies instead of the potato flakes, dot with a little butter or margerine, or mist with a bit of oil, bake till done (based on size of fillets)

I've noticed that baked fish becomes chewy when it has lost moisture. Try reducing time and temperature. I use 350F with the oven set to Broil, fillets approximately 6-inches away from the top burner. Cooking time roughly 5-minutes per 1/2-inch fillet thickness. As Coldone posted, make sure to get a thin layer of oil or butter on top of the fillets so they brown easier.
