bry c Posted December 3, 2002 Share Posted December 3, 2002 Anytime you smoke duck, chicken or goose make a brine solutionBasic brine;1 cup kosher salt(coarse salt)2 cup sugar8 cups watercombine these ingredients in a saucepan (not aluminum)and bring to a boil just make sure salt and sugar have completely dissolvedcool brine until at least room temperature or cooler very important get plastic bag like hefty bag or something big enough and tough enough not to leak or puncture easilyopen the bag in 5 gal bucket and add raw birdspour brine in, then tie bag so no extra air gets in then refrigerate 12 hoursremove birds and smoke awaydiscard brinetry basic first time so you get a taste of whats going on then try adding stuff like garlic, dijon or spicy mustard, chopped fresh ginger root, fresh herbs like rosemary or sage, maple syrup, and/or orange juice to mix before boiling . brining will cause meat to absorb liquid and salt so it will retain moisture during smoking processGood luck, let us know what happens Link to comment Share on other sites More sharing options...
