I informed him I have never purchased an onion in my life and have no intention of purchasing one now. There has got to be a better way! bry c Posted November 26, 2002 Share Posted November 26, 2002 The bag method works well when the meat in question has a high percentage of water soluble fat or something like turkey that gets dry easily. Elk dosent have so much fat and I have a feeling steaming it in a bag would be gross. First defrost your roast a couple of days under refrigeration.Rub the roast with salt, cracked black pepper, and rosemary (I like coarse Kosher Salt)pre heat oven to 375 degreesheat a large sautee pan or cast iron skillet over medium high heat on rangewhen hot, place roast in pan, turning occasionally when the side is browned. it should smoke a little and definately sizzle or else pan is not hot enoughcontinue until all sides are brownedtransfer to oven and roast ontil internal temperature of 140 degrees(use your thermometer!)remove from oven and let this "rest" for 15 to 20 minutes before you cut into itelk goes very well with fruit sauces... take cranberry sauce from the can and melt it down stovetop over low heat and add a little brandy and rosemary...YUM!!!Good luck Link to comment Share on other sites More sharing options...
