BLACKJACK Posted September 17, 2002 Share Posted September 17, 2002 Looking for a recipe for turkey jerky and a recipe for smoking turkey. After eating some turkey jerky at the State Fair, I thought I'd try some, get some stocked up for the hunting season. My plan is to get two turkeys, seperate off the drumsticks and thighs for smoking, then take the breast meat, seperate it off the bone, then cut it in 1/4 inch strips lengthwise, the same direction as the breast bone, then marinate in it. Anybody have any turkey/poultry jerky recipes? For smoking the legs and thighs, I was just going to use your basic water/salt/sugar brine, unless someone has a better recipe??Thanks for any ideas!
