Leah got this out of a local church cookbook, and made it this weekend. Very good and easy.3 eggs1 c. cooking oil2 c. sugar2 c. grated zucchini2 tsp. vanilla3 c. flour 1 tsp. baking soda1/2 tsp. baking powder1 tsp. salt1 tsp.cinnamon1/2 c. nuts (optional)Grease and flour 2 standard sized loaf pans. Beat eggs. Add oil, sugar, grated zuchini and vanilla; cream together. Sift and measure the 3 cups of flour: then sift together flour, soda, baking powder, salt and cinnamon.
