Zucchini Bread

If you have zucchini coming out of your ears like we do (two plants is one and a half plants to many), try this out. Leah got this out of a local church cookbook, and made it this weekend. Very good and easy.

3 eggs
1 c. cooking oil
2 c. sugar
2 c. grated zucchini
2 tsp. vanilla
3 c. flour
1 tsp. baking soda
1/2 tsp. baking powder
1 tsp. salt
1 tsp.cinnamon
1/2 c. nuts (optional)

Grease and flour 2 standard sized loaf pans. Beat eggs. Add oil, sugar, grated zuchini and vanilla; cream together. Sift and measure the 3 cups of flour: then sift together flour, soda, baking powder, salt and cinnamon. Add sifted in gredients to creamed mixture and mix well. Bake at 325 for one hour.
