nunzio Posted August 12, 2002 Share Posted August 12, 2002 jasonk; Yes you can! Canned potatoes turn out very good. Wash and peel freshly dug potatoes. Wash again. Boil for 10 minutes, then drain and pack (hot) into clean canning jars, leaving 1 inch head space. Add 1 teaspoon salt to each quart and cover with boiling water and tighten caps. Process in pressure cooker at 10 lbs for 40 minutes for quarts and 30 minutes for pints. -nunzio Link to comment Share on other sites More sharing options...

I only have the big kettle for hot bathes where I boil the jars for 30 minutes depending what I am canning I guess. Sounds really simple so I would really like to do it, what do you think?
