rmh2o Posted March 20, 2002 Share Posted March 20, 2002 This is not a fish recipe but is very good it comes from the rainforest cafeIngredients:8 oz bow tie pasta1 tsp chopped garlic 2tbsp olive oil1 cup chopped spinach 1 cup broccoli florets1 medium red pepper1 cup grilled chicken sliced into 1/2 pieces1 cup prepared alfredo sauce1/8 cup prepared basil pesto1 tsp italian seasoning2 tbsp shredded parmesan cheesecook pasta according to package drain well & set aside in a 10 inch saute pan cook chicken in olive oil till almost done add garlic and saute garlic then add spinach,broccoli,red pepper,alfredo sauce & pesto & simmer for about 5 minutes Pasta can be reheated by running under hot waterpour mixture over pasta sprinkle with italian seasoning & parmesansuggestions:broccoli can be omitted from this recipe depending on taste this recipe makes 2 servings so I usually doublethe creamy alfredo sauce I use comes in a 16 oz bottle wich is 2 cups I use 5 brothers brandthe pesto sauce I use is by Digiorno use 1/4 cup if doubling recipe Link to comment Share on other sites More sharing options...
