corn relish

Looking for an easy corn relish recipe need to do something with the garden leftovers

Here's one for ya!

Grilled Corn Salsa

Start with:

3 ears grilled & shucked corn kernel

3 slices grilled & chopped red onion

2 grilled tomatoes

Allow the above ingredients to cool and combine together with the following:

½ cup chopped poblano pepper

¼ cup chopped cilantro

1 oz tequila

Salt n’ pepper

We have used this on various things in the restaurant but its gone the best on Duck Quesadillias.
