Getting Beer Batter to Stick

Ever had problems getting beer batter, or for that matter any other batter to stick to your fish?
Here's a simple trick, what you need to remember is that wet things won't stick to wet things. Fish is inherently damp because it is a meat,
so dip your filets in cornstarch or flour and shake the excess powder off before you batter them the batter will stick every time.
Works for chicken too!
It's one of those restaurant tricks.
