Scenic Posted December 27, 2000 Share Posted December 27, 2000 Fishtrap,One of the best and easiet methods I have used is a product made by Morton called Smoked Sugar Cure. Add 1-1 1/2 cups of this cure mix to 5 quarts of water. Heat the water and stir mixture until salt/sugar solution is desolved. Cool this mixture and then pour over your fish.I let this sit in the refridgerator over night then I rinse the fish and let them sit for about an hour on a towel before placing in my smoker. Place the fish in the smoker and smoke with your favorite wood chip. (I like to use maple for fish) Smoke until the fish is dark brown color or until the meat is at the desired dryness. Keep in mind that the fish will be dryer after it cools.This method of smoking is for smoking fish for the flavor and the fish should be handled as you would any other fresh or cooked meats.
