New Yankee Posted April 3, 2006 Share Posted April 3, 2006 Dug out grandma's corn recipe and had it when the MIL was up. She made it two days later she liked it so much. Scalloped Corn Casserole· 1 can sweet corn· 1 can creamed corn· 1 pkg Jiffy Corn Muffin Mix· 1 C sour cream· ½ stick melted butter· 1 or 2 eggs (one egg will be less fluffy, 2 will be more fluffy)Options – I usually put a couple tablespoons finely mined onion, a bit of crushed garlic and a 1/8 t black pepper. The recipe is forgiving so add what you want.Combine all ingredients and place in a greased casserole. Cook at 350 for 1 hr or until firm – do not over cook. I tried it last night and actually put in a couple of boneless skinless chicken breasts and poured the mixture over them, it turned out great, full meal deal.
