crabby Posted January 17, 2006 Share Posted January 17, 2006 Because eelpout is a freshwater cod, and cod roe caviar is a popular food in the Baltic region, I decided to try to make my own. I was pleased with the results.Recipe for Eelpout Caviar: Cut the egg sacks out from the eelpout. Slice them open, being careful not to damage eggs. Carefully scrape the eggs off of the egg sac membrane with a knife. It may take a while to get the hang of it. For every cup of eggs, prepare a solution of ½ cup salt and 2 cups water. Once the salt is fully dissolved in the brine, mix the brine and eggs together in a bowl. Stir occasionally for 20 minutes, being careful not to break eggs. Strain the brine from the eggs using a sieve. Place the eggs in a container and chill them for a couple of hours. The chilled, salted roe looks like an orange paste. Spread it on fresh bread, toast, or crackers. It looks a lot like the Swedish creamed cod caviar you can buy in tubes at Ikea. The Swedish brand has a lot of flavoring added to it, though, so it probably wouldn’t hurt to experiment with the eelpout caviar by adding spices or other flavorings to it. You may also find it to be too salty, so the salt content can be adjusted, but I believe one reason for the high salt content is preservation, so be careful. The end product definitely tastes like caviar. I’ve been eating it for a week now, and have suffered no ill effects. You can also try this recipe on other roe, such as perch. I hope you enjoy it. almostthere! Posted January 17, 2006 Share Posted January 17, 2006 one word comes to mind: TAPEWORM!!!Becarefull when eating fresh water fish. Make sure the fish is fully cooked prior to consumption. Otherwise, the result will be a weightloss buddy you didn't know you have.Will salt kill parasites? You might be able to sell the book on it as the newest weight loss secret. If you eat anything and it comes out with teeth marks on it which are not your own---have it checked out.
