I used Golden Dipt and loved it, but my wife couldn't eat something in it..allergy, so I looked at the food network.com thing and found many receipes for fish & chips types of batters.

I have finally settled on my version that we all like immensely. It's very easy and delicious.

1 C. flour

1 tsp. salt

1/4 tsp. pepper

1/4 tsp. garlic powder

1/4 tsp. dill weed

1/2 to 1 tsp. Old Bay seafood seasoning.

make a batter with soda water or beer.

the batter should be relatively thin.

Too thick of batter absorbs much more oil. Play with it.

350-375 degrees with the oil.

Temps under 350 does not push the moisture out of the fish and lets oil into the fish.

you want a dark golden brown.

I resisted getting them dark enough at first.

Dark golden brown.
