Would like to know where the different cuts - steaks, roasts, etc. come from rather than just hacking at slabs of meat. I found about 10 books on it at Amazon.I got a book from my wife a few years ago that has instructions for butchering deer, field dressing waterfowl, squirrels, rabbit, pheasant and even fish. It also has a bunch of recepies in it. Really cool book but for the life of me I don't remember the title.I would go to Barnes and Noble and look at all the books before you buy to make sure they have what you are looking for in them. uffdapete Posted October 9, 2003 Share Posted October 9, 2003 There are several good videos available also.I would look for one that shows you how to bone out the carcass (no meat saw needed). You'll find that eliminating the bone and trimming the fat will produce much better tasting venison. I have a friend that produced a good video that I could recommend via email if you're interested.
