Stuffing---smoking snack stick question

Got a few questions on snack sticks.... 1st, when u stuff them do you stuff a big long case then go back and twist into the length you want or twist to the size as it comes out of stuffer? Or can I just make a 4 ft stick and hang it in the smoker then cut to size when done? Which brings me to next question... Do you hang them or lay on racks in smoker?

Any other hints or tips would be great! Thanks

I do long chunks and cut after smoke.

Be sure to dunk in an ice water bath as soon as they come off the smoker too.
