in simple terms the 2.5HP is just a bored out 2HP. I don't know for sure but the RPM's the auger shaft spins at may or may not be different. the 2.5HP will have a little more torque(easier & faster for cutting thicker ice then the 2HP). is the extra .5HP that noticiable to the average person out fishing probably not. A 2HP is more then is need for the average guy just starting out with their first power auger. now on the other hand if you are a guide then go with the higher HP.
