Ginger Ale Recipe

I've been experimenting with homemade ginger ale and have found a couple that I like, but am interested to see if anyone here may have a recipe they'd be willing to share. Tonight I did the following recipe and it turned out very refreshing but didn't have the bite I was looking for.

Ginger Water

1 cup fresh grated ginger

2 cups of water

Bring water to a boil, add ginger and turn to med-low, simmer for 5 minutes

Remove from heat, cover and steep for 20 min.

Using a fine mesh strainer, strain the mixture and cool in the fridge, discard ginger.

Simple Syrup

1 cup water

1 cup Stevia (or sugar)

Bring water to a boil, remove from heat and dissolve the Stevia

Once both liquids are cool, put 1/2 cup of ginger water and 1/3 cup of simple syrup into a glass filled with ice, top with soda water and a squeeze of lime.

I think the next glass will have less simple syrup and a shot of bourbon in it. The recipe above was a little sweet for my taste.
